Thefirstsupplìweresoldonthestreet,stillhotandfriedatthetimeinalargepot,duringcityfairs,partiesandspecialevents. Around1800theywereservedinrestaurantsandinnsofthecapital.Itwasinfactin1870thatthesupplìwasinsertedinsideaRomanmenu,attheTrattoriadellaLepreinViaCondotti:“soplisderiso“. Amongthehistoricaltestimonies,JamesJoyce,inaninterviewin1927,recountinghisstayinRome,referstothe“supplittaro“,supplìmaker,whopassedthroughthestreetsofRomewithhislargesteamingcauldronofoil. In1929AdaBoniincludedtherecipeinhercookbook“LacucinaRomana”(Romancuisine). OneofthemostfamousnamesofthisfriedRomanandLatiumtraditionis“supplìaltelefono”,thatliterallymeans“supplìatphone”:thisterminologyderivesfromthefactthatbyopeningthefreshlymadehotsupplìintwo,thestringymozzarellacreateda“thread”betweenthetwopartsmakingitlooklikeaphone. Allowallthecookingliquidtobewithdrawn(ordrainitifitcannotwithdrawproperly)beforetransferringthericeintoalargebowlandallowittocoolthoroughlyafteradjustingitwithsaltandblackpepper(forthisitshouldbepreparedinadvance). Beattheeggsandcutthemozzarellaintostripsordiced. Takeahandfulofricewithgreasyhandsandplacealittlebitofmozzarellainthecenter,closingsoastogiveanovalshapetothericeballs.
